1. It all started with some leftover quinoa I found in the fridge. It was cooked yesterday, sticky today, just sitting there lonely. Maybe 3 cups.
2. I also had some baked yams around. 2 large pieces. They were baked in one piece, so I just pealed the skin off and mashed the soft yams with a fork. Mixed these two together.
3. To this mushy mix I added:
Salt, pepper, grabbed a spoon and fried the cute little mountains in sunflower oil.
So far this is totally vegan….
When I noticed that some of them are hard to lift and turn because they are too soft and easy to break, I added an egg into the mix to hold it more together.… So now they are only vegetarian..
